Put your details at the top and set up columns for description, quantity, rate and amount. Calculate each amount with =B2*C2, add them with =SUM(D2:D11), multiply the subtotal by your tax rate, and add the two to get the total.

Insert a table for the line items and add your header and totals as normal text. Docs does not calculate for you, so check the arithmetic before you send.
Download as PDF and keep copies
Use File, Download, PDF Document so the amounts cannot be edited. Make a copy of the file for each new invoice and put the number in the name, so you can find it later.
